I love good fresh bread or if not quite so fresh, then toasted.
I used to bake cookies a lot. Now I try to resist as if I bake them they will be eaten. By Me.
Hope that loaf turned out well.

I use all purpose flour in my bread ... it turns out fine.

I grew up on sourdough.... we had Pancakes most mornings.... bread was baked every 2 weeks

So how did the bread turn out? It sounds awesome to me!

Oh how I love and miss good bread. Becoming diabetic sucks. But I still cheat on my diet and bake a loaf every now and then. Which reminds me, I really need to get some yeast and various flours for my new American pantry...

Even an herb as sweet as basil is nothing without its bite.

Or my personal favorite, a bit extra yeast in beer instead of water, preferably a good stout for good dark bread.

In Germany I used to make some fun beer-bread layer "cakes" to entertain at parties with, using whole wheat and dinkel (spelt) flours and various German beers. Use cheese and/or salami slices for "icing". Add in various pieces of German sausages, hard-boiled eggs, and/or sliced veggies for a whole meal in a "cake". I may be crazy, but it's a good kind of crazy. Way better than a party sandwich.

But yeah, whole wheat can kind of resist rising. Another helper can be to add baking powder in the final kneed so that it gets both a yeast rise and, as it bakes, a cake rise. Also, when proofing the yeast, a little extra sugar for the yeast can go a long way towards getting a good rise out of whole wheat.

So all good ways to get the most from whole wheat:
a) some self-rising white flour in the mix
b) beer instead of water
c) extra sugar when proofing
d) baking powder in the final kneed for a cake-rise

If anyone knows any other fun tricks, please share.

I miss bread.

It doesn't help that Wifey is a white white white only woman, so she doesn't help make the good bread disappear whenever I do indulge. (Which is why I started specializing in party breads, so they can share the carbs.)
